Cocktails & long drinks

  • Pisco Punch

A classic from old San Francisco: pisco, lemon juice and 20 ml syrup in place of pineapple gum syrup, mixed over ice.

  • Pineapple Margarita

Shake tequila, lime juice and orange liqueur with 15 ml syrup, serve in a salt-rimmed glass – a pinch of chilli works well.

Alcohol-free

  • Coconut Kiss

Shake 20 ml each of JOHN’S Pineapple and Coconut with pineapple and orange juice and a splash of cream – entirely alcohol-free.

  • Pineapple-Mint Lemonade

30 ml syrup, lime juice and fresh mint topped with soda – a few slices of ginger add some spice.

Kitchen & pâtisserie

  • Sweet and sour sauce

Simmer the syrup with rice vinegar, soy sauce, ketchup and pineapple chunks, then thicken lightly – for chicken, prawns or tofu.

  • Glazed ham

Reduce the syrup with Dijon mustard and a little pineapple juice, brush on in the last few minutes – glossy, sweet and savoury.

  • Grilled pineapple

Brush pineapple slices with syrup, grill briefly and serve with vanilla ice cream or coconut yoghurt.
